Madame Saito has been an ambassador of Japanese culture and fusion cuisine in the Philadelphia community for the past 25 years. As owner and chef of Tokio HeadHouse Izakaya located in historic Society Hill, she has pioneered the delicate integration of French and Thai cuisine with traditional Japanese themes. In addition to her Japanese roots, Madame Saito also has formal education at Le Cordon Bleu and the Ritz Escoffier in Paris. As an educator, Madame Saito has taught at Temple University for the past 18 years and performed sushi demonstrations at Philadelphia Museum of Art, University of Pennsylvania, and many other public and private events. Recognized by the All Nippon Sushi Association for her work in teaching the art of sushi abroad, Madame Saito was also the creator of the Philly Roll.
